A couple of healthy dinner recipes for you

A question I get asked a lot by clients for help with is not just what are the right foods to eat but what are some healthy meal options and recipes? I will never claim to be a great cook, but I can definitely cook for myself and know some good, healthy recipes that I have used over the years that I really like. They are nutritious and taste good time. They aren't that hard to prepare either. You don't need to be Wolfgang Puck to make them. 


Recipe #1

Asian sesame salmon


2 tbsp toasted sesame seeds

3/4 tsp ginger

1 tsp minced onions

1 tsp minced garlic

1 tsp red pepper (crushed or flaked)

2 tbsp low sodium soy sauce

1 tbsp honey


Mix all the ingredients into a large bowl. Put it over the salmon and cook for 20 to 30 minutes at 400 degrees in the oven. You can add a choice of a starch like rice, potatoes or quinoa and or a vegetable of your choice. Green vegetables I feel usually go best with this such as broccoli, brussel sprouts (my personal favorite) or spinach.  Then you have a complete, healthy meal that doesn't take long to prepare and isn't hard to make. 


Recipe #2

Chicken marsala


Take 1 lb. of chicken and coat with a mixture of (leave 1 tbsp of mixture to add later with mushrooms)

1/4 coconut flour

1 tbsp garlic powder

1 tbsp marjoram leaves

1/2 tsp black powder


Cook the chicken in a frying pan in extra virgin olive oil and butter on medium heat. After cooking chicken take it off the frying pan and put it on a plate and cover it to keep warm. Then add mushrooms to cook in a frying pan. Cook over medium heat for about 5 minutes or till brown and tender. Then add just a little more extra virgin olive oil as well as.....


1 tsp basil leaves

1/4 marsala wine

2 cups of chicken stock

 

I like using coconut flour because it adds fiber and if someone is watching their carbohydrates it has much less carbohydrates than regular flour. Like with the Asian sesame salmon you can add in a starch or vegetable of your choice for a complete, healthy meal.

 

With my job as a trainer and coach I don't just train people I help them with their nutrition as well. Going over someone's diet and looking at what they eat and helping provide nutritional guidance and counseling is part of my job.
